KETO CREAM CHEESE STUFFED FRENCH TOAST ROLL UPS!!!

I have to know, do you ever struggle with coming up with breakfast ideas like I do? I’m so good at meal planning dinner but tend to put breakfast on the back burning. Which mean we eat a lot of cereal. When I create a super easy breakfast recipe I may do a little dance in my kitchen. These Cream Cheese French Toast Roll-Ups are a simple breakfast idea that your family will love.

Like I said I’m usually not a breakfast person. Mostly because I’m more of a sleeping person. When I do make breakfast I have to make sure it’s easy and quick. This is why I loved these Cream Cheese French Toast Roll-Ups for breakfast. My kids couldn’t get enough of them and they are so easy to make. I actually made these with just regular sandwich bread! Fill with cream cheese and then dunk them in an egg wash! Cook all sides until nice and crispy and finish them off with cinnamon and sugar. An easy breakfast your family is going to love.

Ingredients:

2 large Eggs
1/4 cup Organic Heavy Whipping Cream
1 tsp Vanilla Extract
1 tbsp keto cinnamon sugar
6 slices of Sola bread
4 oz Cream Cheese, softened
1 tbsp sola sweetener
1 tsp Vanilla Extract
1/2 tsp Lemon Juice
1/4 cup blueberries,
Salted Butter for cooking

Instructions:

-In a bowl, whisk the heavy cream, eggs, and keto cinnamon sugar. Put it aside.
-In another bowl, mix the lemon juice, Sola Sweetener, vanilla extract, and cream cheese. Fold in the berries.
-Make three sandwiches between the slices of bread by laying the cream cheese mixture.
-In the milk and egg mixture, dip the sandwiches. Put it aside.
-To medium heat, heat a medium frying pan.
-To the pan, add THREE tbsp of salted butter.
-For about 3 minutes per side, cook the stuffed french toast (or until they are brown). Top with more keto cinnamon sugar/Honest Syrup.
