Have you been baking and cooking a lot? Goodness, we have too! Gourmet dinners, breads, desserts, cookies and more. If staying in isolation lasts much longer, I just might need a whole new wardrobe. Even my yoga pants are feeling a bit snug LOL. Being that breakfast is my least favorite meal, I’m always on the hunt for quick and easy recipes. Sausage biscuit bites fit the bill perfectly.

My friend Diane recently shared this recipe with me. She is a fabulous cook and always has new-to-me recipes. Diane has made sausage biscuit bites for large tailgate gatherings as well as for family and friends.
This recipe makes 40 mini biscuits, which is far too many for just Honey Bee and I. The ingredients can easily be cut in half for just 20 biscuits. Also, leftover biscuits are great to freeze and use as needed.

Ingredients:

2 (10 counts) cans of flaky biscuits (Grands Jr)
1 lb sausage (Tennessee Pride)
2 cups shredded cheddar cheese

How To Make Easy Cheesy Sausage Biscuit Bites

Preheat the oven to 400.
Mix uncooked sausage and cheese gently until well blended. Shape into 40 balls of equal size.
Remove biscuits from cans and separate each biscuit into two layers, making 40 total biscuit layers. Press one layer of biscuit into a cup of the lightly greased mini-cupcake pan. Repeat with remaining layers.
Place the sausage-cheese ball in each biscuit cup. Bake for 8 to 10 minutes or until biscuits are browned and sausage balls are bubbly
