WALKING TACO BAKE

Walking Taco Casserole is cheesy, crunchy, savory, spicy and delicious! All your favorite taco flavors and textures in one scrumptiously easy Mexican hotdish!
Ever eaten a walking taco? Or served them to a herd of hungry youth group kids? lol Walking tacos are a genius single-serve invention that makes it easy to enjoy all the taco flavor without the mess.

Open a single-serve bag of Fritos, add a spoonful or two of seasoned taco meat and your favorite toppings. Eat it with a fork. Delish and portable! (This recipe would be a delicious walking tacos recipe, too! Just layer it in the bag instead of a casserole dish.)

Walking Taco Casserole is a twist on that scrumptious idea. Only, my Walking Taco Casserole makes enough for 6 servings all in one pan. It’s going to rock your next Taco Tuesday!
You guys, it’s seriously SO GOOD! The bottom is a simple taco seasoned ground beef and black beans mixture with tons of flavor. The next layer is melty delicious shredded cheese and then comes the layer of crispy crunchy Fritos. Add your favorite taco toppings and have dinner on the table in 30 minutes or less!

This is a front of the file box recipe! You’re going to be asked to make it over and over again. I would even serve this to company for game day parties, bonfire get-togethers or movie nights. You’re gonna love Walking Taco Casserole!

This Walking Taco Casserole recipe is an easy weeknight meal that has all the flavors of tacos with the crunch of corn chips, too. It’s a favorite with our family (and especially me since it’s so quick and simple to make)! Walking taco casserole is basically the “walking taco” in casserole form versus individual bags. You might have seen recipes for walking tacos, which I personally think is pretty brilliant and is perfect for taking camping, tailgating, or anywhere that a hot meal and bringing dishes along isn’t always easy. Ground beef, taco seasoning, beans, and green chiles or salsa is cooked together, then it’s spooned into individual bags of Frito chips with some shredded cheese. It’s portable and delicious!

It’s so delicious, in fact, that making one big pan of it at home is just taking it to the next level. The casserole version likely came first, but deciding which to make is really a matter of where it’ll be served. We still make the bagged version occasionally when it makes more sense, but the walking taco casserole is so simple and quick for a weeknight dinner that it’s often on our table.

A similar casserole that we love is Dorito Casserole, made with shredded rotisserie chicken instead of the ground beef, and Doritos instead of the corn chips. There are a few other small changes, so check that one out, too!

1 ½ lbs. Ground beef
1 C. Onion chopped
3 oz. Cream cheese
1 Packet taco seasoning
1 Can green chilis
2-3 C. Fritos corn chips
1 C. Shredded taco blend cheese
1 Roma tomato chopped
1-2 C. Shredded lettuce
Salsa and sour cream for garnish

How To Make Walking Taco Casserole:

Preheat the oven to 350 degrees.
Place the ground beef and onion in an oven safe skillet over medium high heat on the stove. Saute until the meat is browned and the onions have softened.
Add the taco seasoning, green chilis and cream cheese to the skillet, and saute until the cream cheese is completely melted and combined.
Top the mixture with the corn chips and then the shredded cheese.
Bake for 20 minutes.
Remove the skillet from the oven and top with shredded lettuce and tomato.
Garnish with salsa and sour cream if desired.
