STRAWBERRY BUTTERCREAM CAKE

Strawberry cake with strawberry buttercream made from fresh strawberries! Strawberry cake made with fresh strawberries and no Jell-O? Yes, it’s possible and it’s delicious! The secret is adding a fresh strawberry reduction to your cake batter and mix the rest into your buttercream frosting for a fresh strawberry cake recipe that tastes like real strawberries!

This vibrant pink layer cake is pure strawberry-on-strawberry goodness, with fresh strawberries going into the cake batter and frosting. One thing to note about the buttercream frosting—it is absolutely bursting with berry flavor, but is easily over-mixed. If you find you’ve broken your emulsion when whipping this frosting up, no worries. You can simply mix in a little more powdered sugar to restore it. That said, we love how purely strawberry-forward the flavor of this frosting is, so we’d advise being very light-handed when adding extra powdered sugar, as it will dilute the berry flavor. In our opinion, it’s better to have a slightly broken frosting that tastes like strawberries than a perfectly pristine frosting that tastes like sugar.

* Ingredients:

+For the sponge cake

°8 eggs

°240g sugar

°240g flour

°1 packet of baking powder

Recipe to be made from start to finish with your electric mixer, your robot equipped with the whisk.

Preheat the oven to 150°C (mine is quite powerful, if your oven is soft from the knee, add 5 minutes of cooking or switch to 160°C).

Prepare and weigh your ingredients, mix the flour with the baking powder. Separate the whites from the yolks, whisk the egg whites, add the sugar spoon by spoon when they begin to foam well. Add the yolks, whisk still then quickly add the flour, whisk. As soon as the dough is smooth and homogeneous, stop.

Pour the dough into a circle.

Butter cream :

3 tbsp of milk

1 tbsp liquid vanilla extract

1 kg 700g icing sugar

Still in the bowl of your stand mixer fitted with a whisk, mix the butter with the milk and vanilla. Gradually add the icing sugar. Film and keep cool. It will suffice the next day to pass it for 10 to 20 seconds in the microwave in order to soften it.

Assembly

cut the sponge cake in 3

Then, cover a slice with coulis + cream and strawberries, before putting the top slice back, cover it with coulis + cream (repeat for the other floor)

Before adding the sugar paste, soak the top of the sponge cake with coulis and cover everything with cream…
