I love casseroles! I have quite a few favorites, and this keto jalapeno popper casserole is on top of my list. It is super easy and quick to make with layers of chicken, cream cheese, cheddar cheese, and bacon! A great keto casserole that is excellent for the entire family!
This jalapeno popper casserole has been one of my go-to keto dinners! An amazing low-carb weeknight meal. Rich, delicious, with the right amount of kick that the kids will enjoy, and super simple to throw together. Serve this casserole with cheesy garlic bread or roasted cauliflower and a simple side salad.
To make this casserole, all you need are simple ingredients that you might already have on hand. Prep this casserole in less than ten minutes, pop it in the oven, and this casserole is ready before you know it!
Ingredients
5 to 6 jalapeno peppers, seeded and diced
3 to 4 boneless, skinless chicken breasts cubed
8 ounces package of cream cheese, softened
6 slices, chopped bacon
½ c. heavy cream
2 c. shredded sharp cheddar cheese
½ tablespoon garlic powder
HOW TO MAKE KETO JALAPENO POPPER CASSEROLE
Step 1: Prepare the oven. Preheat it to 375 degrees. Using nonstick cooking spray, grease a 9 x 13-inch casserole dish.
Step 2: In the bottom of the casserole dish, place the chicken in a single layer, leaving a bit of space between each chicken cube.
Step 3: Combine the garlic powder, cream cheese, and heavy cream until well blended. Pour this on top of the chicken and place the diced jalapenos on top. Sprinkle the cheese on top.
Step 4: Place in the preheated oven and bake for about 40 to 45 minutes or until the chicken is cooked through.
