Corn tortillas are my favorite. I love the flavor you get from them. These cream cheese chicken tacos are made with corn tortillas and baked until crispy.
The filling is nice and thick. Cooked chicken is mixed with cream cheese, galic, green onion, cheddar cheese, salt, and pepper. Then the tortillas are warmed in a skillet with a little oil. So, when you bake them in the oven those oiled tortillas get nice and crispy.
After baking you caould add in some toppings. Shredded lettuce and diced tomatoes whould be a nice addition. However, these are gereat just as is straight from the oven.

INGREDIENTS :
1 package (8 ounces) cream cheese
2 clove garlic, minced
2 cups deli rotisserie chicken or leftover roast/baked chicken shredded
1 bunch green onion, thinly sliced
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup shredded cheddar cheese
10 medium corn tortillas
canola oil for frying
INSTRUCTIONS :
Step 1: Prepare the oven and preheat to 425 degrees F.
Step 2: Place a skillet on the stove and turn the heat to medium.
Step 3: Add in oil and allow it to become hot.
Step 4: Add 1 tortilla at a time and fry it until the colour turns light brown. Repeat this to the rest of the tortillas.
Step 5: Place the fried tortillas in a plate lined with a paper towel to drain the excess oil.
Step 6: Place a saucepan on the stove and turn the heat to low.
Step 7: Add in the cream cheese and heat until melted.
Step 8: Add in the shredded chicken, green onion, garlic, and Cheddar cheese.
Step 9: Remove from the heat and stir until well mixed.
Step 10: Fill each fried tortilla with the chicken mixture.
Step 11: Put the tortillas in a 9×13-inch baking dish.
Step 12: Place it inside the preheated oven and bake for 8 to 10 minutes or until done.
Step 13: Remove from the oven and let it sit at room temperature to cool for at least 2 minutes.
Step 14: Serve and enjoy!
