Apricots with Goat Cheese & Orange Honey-Walnut

Fresh apricots, stuffed with goat cheese, topped with toasted walnuts and drizzled with lavender honey make delicious finger food summer appetizers. This fresh apricot appetizer combines sweet and savoury flavours to make a delicious summer snack!

These fresh apricot canapés with goat cheese and lavender honey are my latest favourite summertime appetizer!

But whenever I spot fresh apricots, I know right away what I want to make. Savoury appetizers made with honey and stone fruit never disappoint!

How do I choose the best apricots?

Look for ones with no blemishes. To tell if an apricot is ripe, look for those that have a deep orange-gold colour and avoid those that are pale orange or yellow. The best apricots will be plump and firm, but slightly soft. You don’t need to peel apricots.

Do I have to use lavender honey?

No! I’ve made these stuffed fresh apricots with plain liquid honey sometimes, too. They’ll be delicious either way.

Can I make these ahead of time?

You can make these fresh apricot appetizers a few hours ahead of time. Follow steps 1 and 2 above, cover and refrigerate, then add the honey just before serving.

Ingredients:

6 fresh apricots, halved and pitted
4 oz goat cheese
1/4 cup honey
2 tbsp orange juice
1/2 cup walnuts, chopped
Zest of 1 orange

Instructions:

Prepare Apricots: Halve and pit the apricots, then arrange them on a serving platter.

Stuff with Goat Cheese: Fill each apricot half with a dollop of goat cheese.

Make Syrup: In a small saucepan, heat honey and orange juice until warm. Stir in chopped walnuts and orange zest.

Drizzle and Serve: Drizzle the warm orange honey-walnut syrup over the stuffed apricots. Serve immediately and enjoy!
